The winemaking tool

Just before the 2025 harvest, the estate completed the construction of its own winery. Located in the heart of the property and in the building which was formerly the Restaurant de Manrella.

The project required a major investment and a complete renovation: full roof repairs, structural reinforcement and insulation of the walls and the entire building, in order to create a winemaking tool that is both efficient and sustainable.

Inside, the cellar is equipped with about fifteen stainless steel tanks made entirely of 316 stainless recognised for its superior quality, and all temperature controlled to guarantee optimal control of fermentations.

A barrel cellar completes the ensemble with new 10 and 20 hectolitre French oak casks and new 400 litre French oak barrels from several cooperages allowing for a diversification of aromas imparted by the wood while respecting the identity of the wine.

Finally, a carefully designed grape reception area has provided particularly high-quality conditions for sorting and handling the grapes with utmost respect for the fruit and the work done in the vineyard.

The grape harvest

All harvests are naturally done by hand and carried out at optimal ripeness, respecting the aromas specific to each variety.

The harvest takes place in specially adapted pallet boxes. Each harvester places his or her bucket directly into the pallet box which is positioned on a tractor-towed trailer that moves continuously with the team. The system reduces unnecessary movement and handling.

This method of operation offers numerous advantages, minimal distance between the vine and the container, gentle handling of the grape bunches and on initial sorting carried out by the harvester. A second sorting is then performed by a designated person when the buckets are placed in the pallet boxes.

The grapes are then immediately transported to the winery where they are gravity-fed into the receiving area. This prevents the grapes from being crushed or damaged, ensuring the integrity of the fruit and the quality of the juice from the moment they arrive in the winery.
